Penne with vodka sauce

  • 500 g ( 1 lb) penne
  • 400 g (1 lb) tomato sauce
  • 125 g (5 oz) oat cream
  • 1 big onion, finely sliced
  • Extra-virgin olive oil
  • Vodka, ½ small coffee-cup
  • Sea salt
  • Black pepper

This is a simple, but impressive, recipe. Stir-fry the onion in hot oil for about 3-4 minutes. Add the tomato sauce e let it cook for a further 2 minutes. At this point, pour half of a small coffee-cup of vodka into the sauce and mix well. After cooking for about 5-6 minutes over a medium heat, add the oat cream and let it reduce slowly. Salt it.
Meanwhile, the pasta should be ready: strain it and finish to cook it in the pan together with the sauce. Add the black pepper before serving.
It is not necessary to uses oat cream: you can use the soy cream as well. Regarding what kind of penne to use, I prefer the penne rigate.
