Vegan Matriciana

  • 200 g /7 oz penne
  • 2-3 cherry tomatoes, halved
  • 70 g / 2 ½ oz smoked seitan, chopped
  • ½ onion, chopped
  • White wine
  • Black pepper
  • Hot pepper
  • Parsley
  • Extra-virgin olive oil
  • Sea salt

“Pasta alla matriciana” is another Italian cult pasta dish, that as most of the Italian cult pasta dishes, involves pancetta, the Italian bacon, and grated cheese, usually pecorino.
Lightly fry the onion until golden. Add the smoked seitan and cook it for about 4-5 minutes. After this time, add some white wine (I didn’t because I hadn’t any at home). Let it vanish and add the half-cut tomatoes. Cover up and let it cook for about 12 minutes. Add the salt and the hot and black pepper.
When the pasta is ready, strain it and mix it with the sauce over a high heat. The standard recipe doesn’t require it, but I added some parsley.
I am not a fan of replacing meat with seitan, tofu, etc,. but I have to say that vegan matriciana is very good!
