Wholemeal muffins with lemon

- 3 cups wholemeal flour
- 1 cup sugar
- 1 cup soy milk
- ½ cup olive or sunflower oil
- The juice of 2 lemons
- 1 grated lemon skin
- 16 gr (1/2 oz) baking powder
Put all the dry ingredients, but the baking powder, into a bowl. Add the oil and soy milk and mix energetically. Add the lemon juice and, finally, the baking powder.
Pour into some muffin moulds (only the bottom greased, not necessary if you use fluted paper case) and cook in the preheated oven at 180° (350°F/ Gas Mark 4) for about 25 minutes.
