Cake with banana and Para nuts (or Brazil nuts)

- 3 cups white flour
- 1 cup caster sugar
- 1 cup and ¼ soy milk
- ¾ cup oil
- 65 g (2.28 oz) Para nuts, roughly chopped
- 1 banana, mashed
- 1 g powdered vanilla
- 16 g (1/2 oz) baking powder
Sieve the flour and the sugar. Put them in a large bowl with the powdered vanilla. Add (bit a bit) the soy milk and the oil. At this point, add the Para nuts. Mix well and add the baking powder. Mix well again!
Grease and flour a small cake mould. Pour the mixture into it and bake in the preheated oven at 180°c (350° F/ Gas 4) for 25 minutes. Check the cooking point and, if necessary, bake again for further 15 minutes at 150°C (300° F) .
