Green tea and coconut muffins

- 2 cups flour
- 1 and ½ cup coconut flour
- 1 cup soy milk
- ½ cup seed oil
- 2 tablespoons corn starch
- 2 teaspoons matcha green tea
- 16 g (1/2 oz) baking powder
To garnish:
- 125 g (4.40 oz) icing sugar
- 2-3 tablespoons cold water
- ½ teaspoon matcha green tea
Mix all the liquid and dry ingredients - but the baking powder and the green tea – in two different bowls. Combine them and add the green tea and baking powder. Pour into, more or less, 12 muffin moulds and bake into the preheated oven at 180°C (350°F/Gas Mark 4) for about 25 minutes.
Allow to cool and unmould.
Once cooled, prepare the icing mixing the sugar, the green tea and the water. Mix well and pour on the top of each muffin. Let it solidify and serve.
Matcha tea is a Japanese powdered green tea. As Nettuno, my home town, is not famous for its gastronomic shops, I had looked for it for several months without results. Finally Paolo bought a little can in London for 18 euros… I hope you find a cheaper one!
