Almond cake

  • 200 g (7 oz) white flour
  • 100 g (3.50 oz) almond, finely minced
  • 150 g (5.30 oz) caster sugar
  • 2 tablespoons corn starch
  • ½ cup seed oil
  • 200 ml (7.04 fl oz) soy milk
  • 8 g (0.30 oz) powdered vanilla (or vanilla extract)
  • 16 g (1/2 oz) baking powder

In a bowl mix the oil and the sugar. Add the corn starch, the white flour (bit a bit) and, when it starts to thicken, the soy milk alternated with the remaining flour. Add the powdered vanilla and the baking powder. Mix well and pour into a small cake mould, previously greased and floured. Bake in the preheated oven at 180°C (350°F/ Gas Mark 4) for about 40 minutes.
