- 2 cups peach and maracuja yogurt
- 3 cups white flour
- 2 cups coconut flour plus 2 handfuls for garnish
- 1 cup granulated sugar
- 1 cup oil
- 16 g (1/2 oz)baking powder
- 125 g (4 ½ oz) icing sugar
In a bowl mix the yogurt and the sugar. Add the oil the coconut flour and the white flour. Mix well. At last add the baking powder and mix well once again.
Pour the mixture into a cake mould (previously greased and floured) at bake in the preheated oven at 180°C (350°F/Gas Mark 4) for about 30 minutes (check cooking point with a toothpick!)
Let the cake cool and sprinkle with the icing sugar and the coconut flour or you can prepare an icing mixing the sugar and 3 tablespoons of water. Spread it over the cake, sprinkle with the coconut flour and let it solidify.
