Mini plum cakes with carrots

  • 2 cups of white flour
  • 4 tablespoons caster sugar
  • ¾ cup of oil
  • 1 cup oat milk
  • 2 big carrots, grated
  • 2 handfuls of raisins
  • 1 tablespoon corn starch
  • 1 orange peel, grated
  • 16 g (0.5 oz) baking powder
  • A pinch of sea salt

Soak the raisins in a glass of hot water for about 10 minutes.
In a bowl, mix well the sugar, salt, carrots and orange peel. Add the oil and the white flour, alternated with the oat milk. Squeeze the raisins and add them to the mixture with the baking powder. Mix well.
Pour the mixture into two mini plum cake moulds (previously greased and floured).
Bake in a preheated oven at 180° C (350 F/Gas Mark 4) for about 30 minutes (check the cooking point inserting a toothpick into the plum cakes: if it comes out clean the cake is ready).
